Head Chef Charlie Aird arrived in Tallinn this January after previously working in the UK and Portugal. In coming to Estonia, his ambition was to set up a kitchen and team capable of complimenting the unique charactor found within each of the dinning outlets of the Merchant House Hotel Charlie has developed a menu that offers top quality European food at inexpensive prices served inany one of Cafe Time, The Ice Bar, KN Brasserie and the hotel courtyard and terrace. To keep his team of young cooks on their toes, Charlie often spends time perusing the local markets for inspiration for the daily specials. " There is nothing more exciting for a young cook than being asked to use imagination to create unique dishes from the freshest of ingredients". Charlie has been impressed by the endeaver and creativity of his young team, and believes that this is reflected in the superb quality they achieve on a daily basis.
